
Our carnivorous western society has adopted two animal species to be used as the predominant sources of mass market meat. Beef and chicken have, in fact, been foisted upon the world, their production encouraged or mandated to feed the American market with low-priced food. Gerald Durrell, the renowned author and naturalist, maintained that this was entirely inappropriate as many countries and climates were far better suited to the husbandry of other species. Tapir, bison, capibara, ostrich, and emu were mentioned.
At one time, millions of bison covered the prairies of the plains states rendering them black with the swarming artiodactyls. The Bison is very well suited to the climate and yields a superior meat product. Bison steaks are available.
